``Hermitis-The Hermit`` originates from a remote vineyard of biodynamic cultivation at an elevation of 600 m. It is a wine intensely aromatic, expressive, mineral, earthy and bucolic, with impressing iodized notes and lasting aftertaste. It has fermented in small tanks and matured in barrels for 12 months. It is pairs perfectly with all preparations containing mushrooms, such as mushroom souffle or risotto but also beef fillet in a mushroom sauce.

The Dafnf grape variety was saved from extinction by the Lyrarakis family, when it was planted in the ``Psarades`` family vineyard at 480m. altitude in central Crete in the early '90s.
Its name derives from the laurel (bay leaf) plant, which is called ``D6fni`` in Greek, as the wine produced resembles these aromas. A wine with a distinctive herbal character, refreshing mouthfeel and intense aromatic a ertaste, in a citrus fruit background.
